Bin End Dinner at the Faculty Club - June 27, 2023

Our favourite season of the year is patio season! TVC occasionally gives its members an opportunity to pair a gourmet dinner with our surplus inventory of premium vintage wines. These ‘Bin End’ dinner events are a lot of fun and help use up bottles left over from previous tastings. In June, our members and guests had a chance to try a variety of wines that were to everyone's liking! Each table discovered different wines which had been selected to pair with each course. Despite the rainy weather, The Faculty Club accommodated everyone inside their beautiful venue.


The reception kicked off with a beautiful Miraval Rose wine that was very refreshing during a hot and humid summer evening.


After the reception, all tables received a bottle of Champagne/Sparkling wine to enjoy with fresh East Coast Oysters with Mignonette, fresh grated horseradish and lemon. Our table received a bottle of 2015 Bernard Gaucher Champagne and the combination with oysters was very refreshing!

The second course, a lump crab cake dish with remolade sauce, grilled lemon and fresh pea sprouts was accompanied by full bodied chardonnay.


The main course consisted of Angus beef striploin with cabernet sauvignon blends and our table was lucky to enjoy a bottle of 2013 Stags Leap Cabernet Sauvignon along with 2006 Chateau Clerc Milon Bordeaux blend.

The meal was concluded with a vanilla creme brulee paired with beautiful 1988 and 1991 Schloss Schonborn rieslings. It was delightful to observe how the riesling acidity would cut through the creamy smoothness of the creme brulee. The combination was fantastic!

Dinners like these are about sitting with the friends we've all made at the Club, both old and new, and comparing notes about the bouquet and palate of the selection of beautiful wines provided. Our members and guests were also able to share the wines between the tables to compare different producers and see how the food-pairing brings the greatest qualities of wine.
